Environmentally Friendly Eating in Local Restaurants
By Hazel Kuniholm
The objective of the project was to set up a regular event in town where local restaurants provide environmentally friendly specials that are vegan, vegetarian, beef-free, or made with locally grown/sustainable ingredients. When diners visited these restaurants, they would learn about how the specials are benefiting the environment, and possibly even try something new at home, such as starting a garden or having beef-free meals a few times a week.
Process: The first step was to find restaurants interested in participating in the event. I first wrote up a longer explanation of the specific details of what participating would involve and what the restaurants would contribute. I then found restaurants interested in participating. I did this by sending out emails to all the restaurants in the Village.Â
With the help of the Hastings-on-Hudson Downtown Advocate, Barbara Prisament, I was able to send my message out to 19 local restaurants. I also visited each restaurant in person to talk to the owners about the opportunity. In the end, three restaurants decided to participate: Wild Culture, Divino Cucina Italiana, and The Good Witch Coffee Bar.
After this, I designed flyers, yard signs, and restaurant signs for advertising and information, as well as setting a date for the event.
